Ichiran is known for their solo dining ramen experience where you can enjoy Tonkotsu ramen and slurp in privacy. I remember walking past their 31st street restaurant and trying to understand what was the hype and why there was always a LONG line. This popular Japanese establishment currently has 3 locations in New York City with its newest location near Times Square.
Ichiran has created the 5 original elements of Tonkotsu ramen, which makes this ramen an experience unparalleled to anyone else.

The unique thing about Ichiran is you can create your own bowl of ramen and customize everything down to the firmness of the noodles, toppings, richness of the broth, and level of spice. If all the choices are overwhelming, then I would encourage you to go with their "recommended set." I ordered the recommended set, and it included chashu (pork), dried seaweed, soft boiled egg, scallion, and mushrooms. Ichican has a 15-second standard when it comes to the delivery of your food. The restaurant believes for you to enjoy the marriage of spices, ingredients, and fresh noodles, it should not take more than 15 seconds for your ramen to arrive at your table from the kitchen. The broth which is extracted from pork bones was rich in flavor, the pork felt like it melts in my mouth, and the spicy red sauce compliment the bowl of ramen perfectly. Ichiran is one of the restaurants in New York City where tipping is not allowed, and no worries as they accept cards as well for payments. If you happen to be near Times Square and have a hankering for ramen THIS IS IT!
